These wholesome granola bars are packed with whole grain oats, raisins, seeds and nuts and are perfect to pack in school lunches or as an energy-giving snack on the run. Use whatever nuts and seeds you like.
Makes around 16 bars
2 3/4 cups oats
1 cups mixed raisins and sultanas
¼ cup sunflower seeds (or other seeds of your choice)
¾ cup mixed nuts of your choice, roughly chopped
3Tbsp coconut oil or butter
¼ cup brown sugar (Demarara or Muscavado)
¼ cup peanut butter (or any nut butter of your choice)
¼ cup honey
2tsp vanilla extract or essence
1tsp cinnamon
Heat the oven to 180C
In a large bowl place the oats, raisins, seeds and nuts and mix to combine.
In s small pot, heat the oil, sugar, peanut butter, honey, vanilla and cinnamon and bring this to the boil and add the hot syrup mixture to the oat mix.
Tip this into a baking pan (29cm x 21cm, or another appropriately sized pan), which you have lined with baking paper. Ensure that you have enough length in the paper to fold back over the bars. Press the mixture into the pan, fold over the baking paper and even out with a flat book and press down quite hard to compress.
Bake for 30 minutes until golden brown. Remove and allow to cool in the pan. Cut into the size bars you like.
